Yummy insect recipes! These recipes were featured at this years "Cafe Insecta"

Chocolate "Chirp" Cookies

2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, softened
3/4 cup sugar
3/4 cup brown sugar
1 teaspoon vanilla
two eggs
1/2 cup dry roasted crickets
1 12-ounce bag chocolate chips
1 cup chopped nuts (optional)

Preheat oven to 375°F. In small bowl, combine the flour, baking soda, and salt; set aside.  In a large bowl, combine the butter, sugar, brown sugar, and vanilla; beat until creamy.  Beat in the eggs.  Gradually add the flour mixture and insects; mix well.  Stir in the chocolate chips and nuts.  Dropped by rounded measuring teaspoonfuls onto an ungreased cookie sheet.  Bake for eight to 10 minutes.

Mealworm fried rice

1 egg, beaten
1 tsp. oil
1/4 c. chopped onions (optional)
4 tsp. soy sauce
1/8 tsp. garlic powder
1 c. minute rice
1 c. mealworms

Using oil, scramble egg in a saucepan (or electric frypan),  breaking egg into pieces. Add garlic and onions. Stir in rice. Add soy sauce.

To prepare crickets and mealworm:  feed them plain rice or apples for a 24 hour period prior to cooking to clean out their guts.

To roast crickets:  remove debris and dead crickets.  Add remaining live crickets to strainer.  Run water over crickets to rise them off for one minute.  Place them in the fridge to cool and therefore slow them down.  Arrange them in a single layer on a baking sheet.  Bake at 200 degrees for 1 hour.
